Chocolate cinnamon chip walnut cookies
As-made:
Melt 4 oz unsweet baking choc, stirring well. Allow to cool a bit, stirring periodically.
1/2 cup plus 1 TBS butter, softened
1/2 cup white sugar
1/2 cup brown sugar, packed
Cream together. Add:
1 1/2 tsp vanilla (more is more)
melted chocolate
Stir well.
Beat one large egg. Add to butter etc mixture and beat in.
In a separate bowl, stir together:
1 cup flour
1/2 tsp baking soda
1/4 tsp salt
Add to butter/egg mixture, stirring well. Add:
1 cup cinnamon chips
1 cup chopped walnut meats
Stir well, use two spoons to drop by rounded teaspoon onto baking sheet.
Bake at 350° for about 8-10 minutes or until cookies are puffy but unset. Remove from oven and allow to sit on baking sheet for about two minutes, then carefully transfer them to a cooling rack or whatever.
Notes for next time:
Butter amount okay, cookies have good spread and hold together fairly well. Too many cinnamon chips; reduce by half? Walnuts okay, possibly more. Made smaller cookies (1.5-2 in across) this time. Very munchable.
