Another iteration of this recipe.

Seems to have turned out well, but we'll see tomorrow I guess.

Notes:

3 large red pears
2 good-sized fingers of ginger
butter for cooking the pear/ginger mix, rather than walnut oil

fresh nutmeg

a scant half-cup of hot water

30 minutes at 350° (some of this was probably that I baked it in a throwaway foil pan nested in a metal brownie pan rather than in Pyrex)

I plan to frost it with commercial creamcheese frosting.

This looks really good. I might try coming up with a gluten free version. Some muffins I made the other day used mostly sorghum flour with a little corn starch and chickpea flour, and it strikes me that the texture and taste would work pretty well for gingerbread.
